Tavolata comes from tavolo — table — and describes exactly what the first evening is about: one large table filled with food and people gathered around it. After arriving and settling into the Castle, we meet for a long Italian dinner. Regional dishes arrive at the table to share, the wine stays open, live music plays through the evening, and everyone has time to settle into Proceno. A traditional Italian table in the middle of a medieval Castle is your first chance to reconnect after Rome.

Breakfast is served to your room. Spend the morning however you prefer: stay at the Castle and enjoy Proceno, or explore the Italian countryside.

In Italy, pranzo di famiglia is part of the weekend ritual: family and friends gather, food is prepared together, bottles are opened and the table can stay full for hours. At Castello di Proceno, we build the afternoon around that tradition. The group gathers in the Castle’s family kitchen with its owner Cecilia and Chef Lucia. Together, we prepare a complete menu from the cuisine of Tuscia — antipasti, first and second courses, side dishes and dessert. Music joins the kitchen, wine stays on the table and the afternoon gradually becomes dinner. For a group coming from SiGMA, this is also where much of the value of the weekend sits: several hours around the same kitchen and table, with space for quality conversations and new connections to develop naturally.

Breakfast is served to your room. The last morning is open for coffee, a walk through Proceno and time at the Castle before your private transfer back to Rome.
